How to make perfect batter of Dosa and Idli with Sambhar recipe!!

India is known for its culture, languages, food. You can find the different options of foods according to area or region wise. Many people do accept other regions' food. 

So today we are going to tell you about south Indian foods. Which are quite famous in all the areas of India. It is nutritious so you don't have to think a lot about it before eating it. 

South Indian region are famous for their food, places, nature and definitely for the film industry. But today we are going to focus on South Indian food. 

The famous food is Hydrabad Briyani, Idli and Sambhar, then there is Dosa which you will get plenty of options and then there is a famous chicken curry of Andra. You will find a lot of famous dishes in South India. 

Today we are going to tell you how to make perfect Idli batter or Dosa batter. You must have tried it thousand times but there will be problems like the Idli are not oft or they might break/ cracks in the center of the Idli or your Dosa's are not crispy or they might break stick to the pan. 

Here, the solution for you and we will give you little tips or secrets for you to make perfect Idli or Dosa. We will also share with you the recipe of sambhar. 

IDLI 



The first thing you should keep in mind is the proportion. The perfect proportion of the Idli batter should be 3 cups of Rice and 1 cup of Urad dal (split black gram) [This serving is for 5 people]. Wash them with water and you have to keep them in the water overnight or if you have to make the Idli at night then soak them in the morning. And remember the amount of water should be double of the Rice and Urad. 

Now many people have doubt about how you should grind the batter or when you should grind it. 

The answer to this question is before 1 hour of cooking. If you want to make Idli or Dosa at 8 clocks in the evening then grind the batter at 7 clocks. Now how to grind it. Take the grinder and put the soaked rice and urad dal into a grinder. But keep in mind if you want to make Idli batter, don't add much water to grind. If you are preparing the batter for Dosa then add a little more water to a grinder. 

Now for optional tips or secrete tips for you. You can add a little amount of baking soda (1/2 tbsp should be added). But it is also okay if you do not add it. Then add salt as per your taste. And keep the batter aside for 1 hour. So it will ferment well and the Idli will become more fluffy and soft.  

For Idli, you make them into Idli makers. It will require a little amount of water and very little oil. As it is steamed food you can make them easily. As the texture is soft every age people can eat with. 

DOSA


For the making of Dosa, you have to take batter of Idli. But the only difference you will find is the consistency. Dosa has more thin and liquidy than Idli's thin batter. Take a non-stick pan then add a little amount of oil (1/4 tbsp) and spread it. Don't heat the pan too much. You can make it on medium flame then take a round-shaped spoon and then pour the Batter on the pan. Immediately make anticlockwise rotation with the batter and you will find the dosa becoming round. 

Bake it for 2-3 minutes and you will see the crispy Dosa from one side then turn it over and cook the other side for 2 minutes only. And here is your Dosa ready. 

If you want to make the outside dosa then you can do it after the Dosa batter is cooking on the pan add Potato, garlic, and ginger paste then add masala like red chili, salt, black pepper, garam masala, onion, and coriander. If you like then you can also add little lemon juice also and mix it nicely. And you have to cook only on one side. Don't worry about the Dosa, as it is very thin it cooked very immediately. 

And you can enjoy your Dosa with masala or without masala. It all depends on you. 

SAMBHAR 

The most important dish with Idli or Dosa. So here is the great and yet simple recipe for you. 

Take urad dal, coconut, red chili, whole coriander seeds, and black pepper. And cook all this on the pan and do remember to bake all these ingredients dry (dry roast we have to do). Cook them only for 5 minutes only and then grind them. It will be your masala for Sambhar. 

Take a pan or Kadai take oil in it. When the oil is hot then add cumin seeds, Tej Patta (2), cloves (4), Dal chini, and curry leaves (5-8). Then add chopped onion (2 large) and bake them until they become golden brown. Then add chopped tomatoes (2 large) and bake them. Then add potatoes (2) and make sure you have to bake them in oil. When we cook vegetables in oil they taste better. Then add masala like turmeric, red chili powder, salt, coriander powder, and garam masala. And then add the masala which was made earlier (2 tbsp) and cook it for 10 minutes. Then add drumsticks, and cooked Tuwar dal. Then add some water. Later cook it until the water boils then add Imli and jaggery into Sambhar. Then you can add Sambhar masala and Cook the Sambhar until the vegetables are cooked. 

You can also add the vegetables like brinjal or Yam. It all depends on your choice. But the flavor you will get in Sambhar is really satisfying. 

You can use the Sambhar with Idli or Dosa. It goes with everything perfectly and you can also make green coconut and coriander chutney with them. Try this recipe and your family will definitely love it.
